South San Francisco Park and recreation 5th annual chili cook off 2017 (plus a recipe)
Hi foodies this past weekend I made a hearty red eyed chili using beef and Starbucks cold brewed coffee cooked to perfection it may look greasy is because i.made a 2 quarts of meat on the day of chili cook off i had to use 3 lbs 2 quarts are samples and 1 quart is for the judging I served it over chips and guac this weekend, so those who came thank you for joining us and those who didn't come will hand out the recipe now, so take it easy enjoy and won honorable mention and proudof myself and my brother Billy
Red eyed beef chili
3 lbs ground beef
1 onion chopped
1 red bell pepper seeded and diced finely
2 cloves of garlic minced
2 tbl chili powder
2 tsp ground cumin
1 tsp each paprika, garlic and marjoram
Salt and pepper
2 cans diced tomatoes
1 bottle Starbucks cold brewed coffee
1 cup or so water
2 tbl cornstarch + 2 tbl cold water
Method
I'm a large heavy pot over medium heat add the meat and veggies and cook until rendered down and is no longer pink drain excess fat and return to pot add the spices tomatoes, cold brew, and water bring it to a boil then reduce the heat to asimmer for 1 hour at last half hour mix water and cornstarch and add to chili and cookuntil thickened slightly enjoy
You can do this in a instant pot or slowcooker as well.
