Cranberries 2 ways (cranberry maple sauce and cranberry salsa)
hello reader's i hope you are getting ready for thanksgiving, i am too, so just to get you started i made ahead 2 sauces, with cranberries 2 ways, so i hope you make them memorable on thanksgiving and enjoy all the fun, so i hope this gets you cooking
Cranberry Salsa
Recipe from a bay area chef
1 1/2 cups fresh cranberries-i use 1 12 oz package
2 tbl sugar or stevia
1 large or 2 roma tomatoes diced
3 tbl white vinegar
1 tsp salt
pepper
2 tbl chopped cliantro
1 jalapeno seeded and diced
method
whirl sugar and cranberries in a food processor (i use the blender, use a little water and it helps chopped it up finely) until finely chopped then scrape them into a large bowl and add the dice tomatoes and fold them in, then add the vinegar, salt, pepper, cilantro and jalapeno, and stir to blend. then chill them for 1 hour before serving. salsa keeps fresh for several days if made ahead serve with tortilla chips and yum!
Cranberry maple sauce

1 pkg fresh cranberries
1 cup light brown sugar
2 tbl maple syrup or maple agave
1 tsp each grated orange and lemon zest
method
in a pot combine cranberries, sugar, syrup and zest with 1/3 cup water bring to a boil on medium high and reduce hear to low and cook until cranberries have popped 5-10 minutes do not burn the pan and mixture has thickened remove from heat let cool prior to refrigerating then refrigerate until ready to serve enjoy with turkey
