Quinoa salad with Avocado and Citrus (recipe from my good friends from cookin the market)

hi readers, today i went to my little niece's birthday party for family, she has a lot of fun seening me, i made some quinoa for the whole gang with mexican flavors, the recipe used lemon and parsley but i swap it for cilantro and lime to give it a fiesta feel for the day of the dead themed party, other foods included tamales, carne asada, etc i even had a cocktail, i usually do not drink alcohol daily, i just use it as a treat for an occasion i had a eggnog white russian my brother in law danny who is my sister molly's husband he's the best bartender and brother in law too! he's a good dad to my nieces and nephews. in the future blogs will do a thanksgiving cocktail section, will include danny's eggnog white russian and i plan on making The Chew's Reese's white russian on thanksgiving so will do that, so in the mean time enjoy the quinoa salad and will keep on feeding you

Quinoa salad with avocado and citrus

1 1/2 cups quinoa
2 1/2 cups water
1 grapefruit peeled and diced
2 avocados, pitted and finely diced
1/2 red onion, finely chopped
1/2 cup chopped fresh cilantro
1/4 cup olive oil
3 tbl lime juice
2 tsp lime zest
2 cloves garlic, grated

method
rinse quinoa under cold water and add to the saucepot along with water, bring to a boil, then reduce heat and simmer for 15 minutes, check and then fluff, (do not stir while cooking please) then transfer to a bowl. add in the grapefruit, avocado, red onion, cilantro, olive oil , lime juice and lime zest, salt and pepper to taste and mix to combine, if too sweet, i would add garlic, it will give it a punch trust me and serve to your friends!
