Ham and cheese polenta (from mom's kitchen handbook)

Hi foodies this polenta comes from fellow food blogger and culinary instructor at sprouts daly city store katie morford of mom's kitchen handbook. Been taking her classes on healthy wholesome and delicious recipes. She is also a fan of recipes from an autistic chef and my instagram follower. I.gave my sweet mom a bowl with butter and she is in love with this recipe. My favorite part of this recipe is using ham from the honeybaked ham place. If you transport to Italy no need to with this recipe enjoy





Ham and cheese polenta

1 1/2 cups water
2 cups milk
1 tsp kosher salt
2/3 cup quick cook polenta
2 tbl butter plus more for serving
1/2 cup medium grated cheddar cheese
1/3 cup chopped ham such as honeybaked ham
1 cup halved cherry tomatoes
Black pepper to taste
Method
Combine water, milk and salt in a medium saucepan over medium heat cook until just shy of a boil keep an eye on it so it doesn't boil over gradually add polenta whisking as you go. Lower heat and simmer gently stirring regularly until the polenta absorbs the liquid and is tender 5 minutes the polenta will thicken as it cools feel free add water but not too much it's perfect as is
Remove polenta from heat and add butter and 1/2 cup cheese and stir until melted.
Spoon polenta into 4 bowls and top off with more cheddar, pepper, halved  tomatoes and ham. Serve immediately to your loved ones
