Plant based taco melts with green onion bell pepper guacamole

 Made these delicious plant based taco melts with green onion bell pepper guacamole that is vegetarian friendly πŸ˜‹ and I highly recommend this easy recipe and easy on a weeknight blues using @impossible_foods and @ca_avocados 





Plant based taco melts with green onion bell pepper guacamole 


2 tbl vegetable oil 

1 lb @impossible_foods ground plant based meat 

1/2 packet taco seasoning mix 

2/3 cup water

8 corn Tortillas 

8 slices American cheese 

Nonstick cooking spray 

For scallion bell pepper Guacamole 

1 avocado pitted, scooped and mashed

Juice of 1/2 lemon 

1 cloves garlic grated 

1 tsp honey 

Seasoned salt

4 green onions trimmed and thinly sliced 

1/2 yellow bell pepper diced finely 


Method 

In a bowl combine all guacamole ingredients and set aside.

In a large nonstick skillet over medium high heat heat oil once hot add ground plant based meat and cook until rendered down do not drain excess fat immediately add in taco seasoning mix and water and cook 5 minutes to cook down. 

Meanwhile In a small skillet over medium high grease a nonstick skillet over medium high heat once hot add tortilla one at a time until wilted place half a slice of American cheese then spread meat evenly over the cheese half and top with another half. Fold up and cook 2 minutes per side until golden brown on both sides and repeat with 7 more taco melts and enjoy with guacamole
