Banana caramel pie (happy pie day) (GF)

Happy pi day readers want a easy no fuss pie with minimal ingredients I got you covered. So my friends at South San Francisco Public Library has its monthly cookbook club meeting and its all about sweet pies and savory pies set for March 31st if you want to join us please contact Shante at  santos@plsinfo.org ok or Brittany at Austin@plsinfo.org for information they also can help coordinate author visits and just got an article about to release on Tuesday plan to make a quiche for the group so you can enjoy my banana caramel pie and made with gluten free gingersnap pie crust from grocery outlet so I hope you enjoy 



Banana caramel pie (gluten free) 

1 package gluten free gingersnap pie crust (I found at grocery outle for 99cents)

For caramel 

1 cup sugar 

1 cup half and half 

2 ripe bananas sliced 

2 cups cool whip 

3 tbl semi sweet chocolate chips 

For the caramel combine sugar and cream in a large saucepot and cook over medium high heat stirring until dissolves. When mixture comes to a boil reduce heat and cook gently stirring constantly until it becomes a thick dark caramel color. Do not let it turn too brown or you'll have to start over again.

When the mixture is caramelized off heat I take a little more half and half to stop the cooking process. And it will be creamy off heat and cool completely.

Slice bananas and layer on top of pie crust spoon caramel over bananas, cool whip and top with chocolate chips refrigerate until time for dessert and enjoy makes 8.
