Keto sloppy joe stuffed yellow squash

Keto Sloppy Joe stuffed yellow squash 

1 tbl olive oil
1 tbl molasses
1/2 lb grassfed ground beef 1 6 oz can tomato paste
2 tbl brown mustard
1/2 onion chopped
1 tbl chili powder to taste
2 tbl organic ketchup
1 tbl rice vinegar
salt and pepper to taste
1 can sliced mushrooms 
4 yellow squash ends trimmed,  halved and hallowed out
1 cup shredded cheddar cheese 


heat olive oil in a sauté pan over medium high heat, add the ground beef and onions and cook to brown, be careful not to splash yourself and you will be fine. stirring constantly. Drain off excess fat and add tomato paste and mix well adding water to achieve desired thickness. stir in mustard, mushrooms, ketchup, vinegar and spices and let it simmer until warm through.
Place squash halves into the glass pan spoon meat mixture into the squash shell evenly and top with cheese and bake for 20 minutes or until melted and lightly browned on top, enjoy this keto friendly dish
