sweet potato picnic salad
On Monday i made sweet potato salad for several neighbors to enjoy i made it with sweet pickle relish and mayo based dish my neighbors loved it i hope you.do too so make this dish along with grilled hot dogs and burgers so xoxo
2lbs sweet potatoes peeled and cubed
12 hard boiled eggs chopped
1 pint mayonnaise
1 jar pickles chopped
1/4 cup pickle juice
1 yellow onion finely chopped
Method
Boil potatoes in boiling water for 20 or until fork tender drain and cool.
Under cold water. Mix mayo chopped pickles pickle juice boiled eggs and yellow onion in a large bowl abd toss to combine add the cooked sweet potatoes and mix all together in a bowl chill and serve
