Pear pecan upside down cake




Today I made a pear pecan upside down cake adapted from @cooksillustrated magazine and by the way it came out beautifully made. The original recipe was made with toasted @cawalnuts but Try it with @pecansfromgeorgia instead and is @pauladeen_official approved and she would have a slice with me. Here's the complete recipe and my pops, mom and I are going to eat it for ourselves tonight 😋 I'm not sharing. It's that good #wfc2018dessertfinalist #foodchamp 


Pear pecan upside down cake 

Topping 

4 tbl @challengebutter melted 

1/2 cup brown sugar 

2 tsp corn starch 

Pinch salt 

2 firm bosc pears 


For cake

1 cup chopped pecans 

1/2 @kingarthurbaking

Scant 1/2 tsp salt 

1/4 tsp baking powder 

1/8 tsp baking soda

3 eggs 

1 cup sugar

4 tbl @challengebutter melted 

1/4 cup @criscobrand vegetable oil 


Method 


For the topping: adjust oven rack to middle postion and Preheat oven to 300 degrees 

Grease an 9x13 inch pan and line with parchment paper. Pour melted butter over bottom of prepared pan and swirl evenly to coat. Combine brown sugar, cornstarch and salt together and sprinkle evenly over melted butter.

Peel halve and core pears cut into slices and arrange slices in even pattern 👉 inward if using 2 small pears just slice small and arrange (like in photo 📸 here) it doesn't have to be perfect but rustic is fine.

For the cake: pulse pecans, flour. Salt baking soda and powder in food processor or until pecans are finely ground 8-10 pulses or 12. Transfer pecan flour mixture to bowl 

Process egg and sugar in now empty food processor until very pale yellow about 2 minutes. With processor running add oil and butter in steady stream until incorporated.

Add pecan flour and pulse 5 to 7 more times 

Bake until center Is set and bounces back when gently pressed and toothpick tested in center comes out clean 1hour and 10 minutes rotating pan after 40 minutes. (You need to turn pan the opposite so it bakes evenly) let cake cool in pan for 15 minutes carefully run a pairing knife around sides of the pan invert cake onto a Platter discard parchment paper let cake cool gor 2 hours. Slice and serve with cool whip on the side
