Turkey mug pies and pimento cheese biscuits

Today I made a turkey cheddar biscuit mug pies using both @rachaelray and the biscuit recipe that won me top 16 in the @thejellyqueens biscuits and jampionships 2021 and I wanted to share this soup and biscuit recipe using Thanksgiving leftovers of course. So use up your leftovers in this fun soup and biscuit recipe


Pimento cheese biscuits

2 tbl @challengebutter melted
2 cups @kingarthurbaking all purpose flour
1 cup butter milk
3 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup shredded cheddar cheese
3 tbl diced pimento drained and patted dry onto paper Towels
Method
Preheat oven to 400ºF degrees
In a mixing bowl combine butter,  milk, powder,  soda, and salt. Stir in 3/4 cup  flour and cheese and 4 tsp melted butter and stir add 3/4 cup more flour use remaining flour to knead one flour surface. Flatten into a disk cut into circles and place onto a cookie sheet bake 10-12 minutes or until golden brown on top

Turkey mug pie
1 recipe pimento cheese biscuits
2 tbl @challengebutter melted
2 cups cooked leftover turkey
1 celery stalk chopped
1 onion chopped
1 carrot diced
1 sweet potato peeled and cubed
Salt and pepper
2 tsp @traderjoes everything but the leftovers seasoning blend
2 tbl all purpose flour 
1 cup half and half
1 qt @zoupgoodreallygood chicken bone broth
1 cup frozen peas

In a medium pot over medium high heat melt butter once hot add veggies and cook down for 10 minutes add in everything but the leftovers seasoning at the last 2 minutes of cooking. Stir in flour and cool 1 more minute add cream and bone broth bring soup to a boil then simmer and cook for 10 more minutes or until thickened enough and at the end of cooking add in diced cooked leftover turkey and frozen peas and allow to heat up to mellow flavors to meld divide into mugs and top with a biscuit
