Sibbys cupcakery contest (plus a recipe)

Hi again this is part two of three of the san mateo county fair culinary arts series been super busy with cooking and competing as said. But I wowed sibby with my lemon cupcakes filled with lemon lavender curd and buttercream frosting so I'm bummed that she didn't read my recipe I would score on creative use but only won 2 honorable mentions ok. Next year will redeem myself just had a awkward year with family and life. So we definitely will welcome sibby again next year too! I'll be entering a new recipe so stay tuned will have to practice twice not once.

Lemon cupcakes filled with lemon lavender curd filling and buttercream 

1 cup flour 
1/2 tsp baking soda 
1/2 tsp baking powder 
Pinch of salt 
1/2 stick butter room temp 
3/4 cup sugar
2 eggs 
1 drop lorann lemon oil (can be found at
Baking arts in san mateo or busy bakers in San bruno will link below)
1/2 cup buttermilk 
1 recipe of buttercream recipe below 
1/2 cup jelly queens lemon lavender curd

Quick and almost professional buttercream 

1/2 cup butter softened 
1 1/2 Tsp vanilla
2 cups powdered sugar
2 tbl milk 
5-6 drops yellow food coloring 
1 tiny drop lorann orange oil 

Method 
Preheat oven to 350 
Line muffin pan with cupcake liners set aside
In bowl sift flour, baking powder, baking soda and salt into a bowl and set aside
In  a large mixing bowl using a hand mixer on medium speed beat butter and sugar together until smooth and fluffy and very pale in color 2 minutes. Stop and scrape the sides down of the bowl.
Add eggs one at a time until the mixture is creamy add the lemon oil lower the speed of the hand mixer and slowly add the dry Ingredients until they are just incorporated add the buttermilk and finish mixing by hand until batter looks smooth
 
Fill each with 1/3 cup liner (almost full) Just 1/2 inch below top of liner. Bake for 22 minutes or until toothpick inserted comes out clean remove from oven and cool in pan for 10 minutes. Carefully remove to rack completely when cool hollow out center with a pairing knife spoon a tablespoonful of the curd and place cake top in place to glue cake  pipe cake with frosting and enjoy 

For buttercream Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract and orange oil 

Pour in milk and beat for an additional 3-4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

Tip to make buttermilk just use 1/2 cup milk with a juice of one lemon let sit for a minute you'll instantly have buttermilk
