The elvis cupcake (banana cupcakes with peanut butter frosting and candied bacon) for 2019 san mateo county fair culinary arts

Hi bakers its chef ava marie here, yesterday I made a elvis cupcake made base with his favorite sandwich peanut butter, bacon and banana and it would be a great idea for this cupcake. To impress sibbys cupcakery in June need to do some piping skills. But overall delicious cake and great bacon. So I hope you enjoy this cupcake recipe from my family to yours!!!





The elvis banana cupcake

For candied bacon
1/3 lb applewood smoked bacon
1/4 cup brown sugar

For the banana cake:
1 stick butter softened
1 1/2 cups sugar
3 mashed riped bananas
1 tsp vanilla
2 cups flour
2 tsp baking soda
1/2 cup milk

Peanut butter frosting
1/3 cup peanut butter
1/3 cup milk
1/2 vanilla
3 cups powdered sugar

Method
For the cake: in a large bowl cream butter and sugar. Add eggs one at a time beating well after each addition. Add bananas and vanilia, mix well. Combine flour and baking soda add to creamed mixture alternately with milk scoop into 12 cup cupcake lined pans bake at 350 for 25 minutes or until toothpick is inserted into center comes out clean. Take out of oven and increase heat to 375 degrees. Layer bacon in a 9x13 inch pan sprinkle with brown sugar bake for 25-30 minutes flipping halfway until golden brown and crisp. Let drain on a parchment paper to allow to cool.
For the frosting; in a bowl beat peanut butter, milk, vanilla, until blended slowly and beat in powdered sugar until smooth. Fill with a piping bag fill with a tip. Pip on cakes around the circles and garnish with a candied bacon.  It's a hound dog party all the time!!! It ain't no cake of mine!!
