Hey there, yesterday I was craving for Chinese food but rather than takeout I wanted to cook it so I headed out to the daly city farmers market and got at the mushroom farm stand a shiitake mushrooms they are really delish best not to overcook these b

Shiitake mushroom Chinese fried rice
4 cups white rice cooked 
4 tbl avocado oil divided
1/2 onion chopped
1/2 lb shiitake mushrooms ends trimmed and sliced
3 eggs beaten 
Splash milk  
3 tbl soy sauce low sodium
1 tbl hoisin sauce 
3 tbl water 
In a large skillet over medium high heat heat 1 tbl avocado oil and saute onions and mushrooms for 5-6 minutes. Remove from pan. 
Add 2 tbl avocado oil on same pan over medium high again and add the eggs and cook until the eggs cook like curdled custard not browning it will be bad. Remove from heat to plate. 
Clean the same pan and cook over medium heat and add the cooked rice and break down the rice until sizzling hot. Add water continue to sizzle 2 minutes. Add 2 tbl soy sauce and hoisin fold to combine and the mushrooms and eggs back to pan and fold Again to incorporate and let cook 4 minutes taste and add 1 tbl more soy sauce if needed and serve in bowls
