Easy Apple mini cakes (FOR STEVIVA KETO HOLIDAY BLOGGER CHALLENGE- DESSERT ENTRY )

Hello foodies merry Christmas to all just wrapping up the blogger challenge for #stevivaketoholidaybloggerchallenge #steviva using #ketosesweet sugar substitute I went from using steviva in my cinnabon white hot cocoa to using ketosesweet liquid for my pepita chicken parmesan with Italian tuscan tomato salsa
And now with dessert I did cheated again on using carbs in my desserts its the holidays and i believe moderation is key and happy to take this contest. Thanks to Ethan C for hosting these fun blogger challenges and look forward to many more in the new year in 2019 so heres my recipe and get cooking

Easy apple mini cakes

2 eggs
1/4 cup veg oil
1 cup ketosesweet steviva monkfruit blend
1 1/2 tsp baking soda
1 tsp cinnamon
2 tsp vanilla
1 1/2 cups all purpose flour
3 cups chopped and peeled apples

Method
You'll need 2 mixing bowls in  first bowl mix together the first seven ingredients. In second bowl chop and add the apples to bowl.  Add apples to cake mixture and toss to coat.  Divide among  greased 8 disposable baking cups I call them custard cups (they can be found at busybakerssupplies.com i believe they ship online) bake at 350 for 20-25 minutes check with toothpick it may brown quickly especially in convection oven so ovens vary. Let cool then invert and serve make 8 cakes
