Bacon and cheddar twice baked potatoes

This past Sunday I had leftover raw potatoes from the holiday and thank goodness they are still fresh because I had to do something with them so I made my late cowboy friend jack tidwells nephew donny Wayne's twice baked potatoes. They are southern as it gets. So I hope you use that spud in so many ways this is one way. Happy entertaining





Bacon and Cheddar twice baked potatoes
4 large or 6- 8 small baking potatoes
A drizzle of Olive oil
1 8 oz container sour cream
1/4 stick butter
8 pieces bacon cooked and crumbled
1 cup Colby jack cheese plus more to top off potatoes.
2 green onions finely chopped
Salt and Pepper
Method
Preheat oven to 400. Wash and dry the potatoes. Use a drizzle of olive oil and run it on the outside of the potatoes. Sprinkle with salt  wrap in foil place them on a sheetpan (we did it without foil and it works just as good) and bake for 1 hour and 10 minutes or until tender remove then from oven and allow them to cool enough to handle. Reduce oven temperature to 350. Then unwrap potatoes lay one on its side cut lengthwise cutting off top carefully scoop out the inside of the potatoes Leaving a shell.   In a large bowl combine the potato insides you hollowed out,  with 1/4 stick melted butter, sour cream, cheese, onion, bacon  and pepper to taste, mixing well. With a spoon stuff each potato shell to heaping amounts placing them on a cookie sheet and top with more cheese bake at 350 degrees for 15-20 minutes until warmed through and browned on top.
