Jellied Cranberry sauce with pear hard cider

Happy early Thanksgiving! Yesterday was day one of Thanksgiving prep made a cranberry sauce with boozy pear hard cider. It's a great compliment to serve with Turkey and ham on Thanksgiving day i hope you find this enjoyable and tasty. More to come






Jellied cranberry sauce with pear hard cider
1 12 oz bottle pear hard cider
1 1/2 cups sugar
1 Bartlett pear, cored and diced 
1 tsp allspice 
1/2 tsp black pepper
Sea salt 
1 bag 12 oz fresh or frozen cranberries, thawed if frozen
Method:
Combine the cranberries, cider, sugar, apple allspice, pepper and 1/2 tsp sea salt in a medium saucepan over medium high heat. Bring to a boil then reduce heat and cook stirring once until pear starts to fall apart and cranberries are soften and begin to pop 10-12 minutes.  Let cool slightly.  Then transfer to blender and puree until smooth. Strain through a food mill into a bowl or container pressing on the solids. Smooth the top. Let cool completely then cover and refrigerate until set at least 2 hours can be made 2 days ahead.
