Massaged Kale salad with goat cheese and pepper jelly vinaigrette

Hi guys, its national kale day for you health nuts, if you plan to replace avocado for goat cheese for a dairy free option go ahead. I massaged the kale with salt pepper and 1 tbl olive oil and message for 5 minutes till tender that's it and I am rewarding you my salad recipe #happynationalkaleday







Massaged kale salad with goat cheese and Pepper jelly vinaigrette

1 bunch kale steamed, ribs discard and leaves chopped finely
1 tbl olive oil
Salt and pepper
Wash and pat dry kale leaves. Chop kale finely and place into a large bowl. Add salt pepper and olive oil and massage kale for 5-10 minutes or under a bit soft tender and will.melt in your month
Pepper jelly vinaigrette
3 tbl olive oil
3 tbl rice wine vinegar
Salt pepper
Juice and zest of 1 lime
2 tbl red pepper jelly
1 shallot finely chopped
2 oz goat cheese crumbled
In a Mason jar layer the next 6 ingredients except goat cheese and close jar and shake really well for 60 seconds until blended. Pour 1/2 of dressing over kale and toss to combine add 2 oz crumbled goat cheese and toss to coat. Add more dressing if seem dry and garnish with more goat cheese if desired and pass around the table
