Cashew honey lime hamantaschen ( for keystone pantry alluose blogger challenge) entry #3

Hi foodies this is third and last of the blogger challenge for keystone pantry alluose. This jewish cookie Is traditionally a triangle but modified it with.a purse method and it turned out well done. So my moms best friend Amy shennum is Jewish and I think these might be what she remembered growing up.  I look up old community built cookbooks as contest resources. This is from a lady who was a teachers aide in the 1970s before my time. So enjoy these gems and dont overbake like I did with these ok much love











Cashew honey lime hamantaschen

4 cups all purpose flour
1 cup keystone pantry alluose sweetener
1 grated lime zest
4 eggs
1/3 cup vegetable oil
Filling:
1 cup honey
1 lime juiced and zest
2 1/2 cups chopped salted cashews
1 tsp cinnamon

Method
In a large bowl mix dry ingredients. Add eggs and oil mix and knead lightly together. Toss lightly onto floured board. Roll out 1/8 inch thick cut into 3 1/2 inch round biscuit cutter.  Place nut filling in center of each round and fold up three sides and pinch together to form a triangle or baskets. To secure edge moisten outer circle of dough  with water so they stay pinched together. Place in a parchment lined baking sheets bake for 15-20 minutes or until nicely brown do not overbake
Filling: heat honey at medium low heat in a large kettle and add cashews  lime juice zest and cinnamon.  Cook slowly or until candy mixture is thick. Then cool and shape into small triangles. Set in cookie dough that has been cut into 3 1/2 inch rounds.
