Oatmeal spelt shortbread cookies (fit for a city council candidate)

Hi foodies this past weekend I had the honor to bake cookies for a ssf city council candidate kick off event at clay park for founder of this local everything South city social media empire kamala sliva. She talked to my fellow residents on one thing, preserving our community and quality of life. That is what residents want in our city even lifelong residents like myself as a food blogger and  they happen to be fans too and my longtime friend Sandy was there helping the two comittee planners Cindy and Sharon set up for the midterm elections. These are from martha Stewart and they loved them and I gift you the recipe














  • Oatmeal and spelt shortbread cookies
  • Whisk together spelt flour, oats, and salt. Beat together butter and sugar on high speed until fluffy, about 3 minutes. Add egg and vanilla; beat to combine. Reduce speed to low; add flour mixture to combine. Gather dough in plastic wrap; form into a rectangular disk and refrigerate until firm, at least 1 hour and up to 1 day.
  • Preheat oven to 325 degrees. On a floured surface, roll out dough to a scant 1/2-inch thickness; cut into 2-inch squares. Place 1 inch apart on two parchment-lined baking sheets. Bake until firm to the touch and golden around edges, 24 to 26 minutes. Let cool completely.
