Teriyaki chicken thigh stir fry

Hi foodies I had a great weekend at via west followed by a great birthday dinner with family at black bear diner and what do you do with leftover cooked veggies? Because food waste is a epidemic in our country I am on a mission to reduce reuse good food that is delicious to eat too! So with out further intro I present you teriyaki chicken thigh stir fry made with onion, cooked roasted veggies from black bear diner and teriyaki sauce. So I hope you enjoy this recipe as much as we do waste not want not folks my mom says





Teriyaki chicken thigh stir fry

1/2 bottle island teriyaki sauce adjust to your tastebuds
1 onion chopped
1/2 cup chopped roasted broccoli and carrots
2 tbl vegetable oil
1 lb cubed boneless skinless chicken thighs
3 tbl cornstarch to 3 tbl cold water

Method
In a skillet hear oil over medium heat when pan is hot add onions and cook until translucent not golden add chopped roasted broccoli and carrots and cook for 2 minutes more add cubed chicken along with teriyaki sauce and cook for 6 minutes or until cooked through and add slurry and cook until thickened 1-2 minutes. Serve over cooked rice
