Cheesy tex mex cauliflower rice

Hi foodies this week I happen to have some frozen cauliflower rice in the freezer so decided to make my mom and I a cheesy tex mex cauliflower rice super quick easy to make and it's a one pan meal anyone could make. Prep ahead then when you get home from work all you do is dump saute and stir that is it. Thanks to my neighbors for the recipe idea and I hope you all enjoy











Cheesy tex mex cauliflower rice

1 tbl evoo
1/2 white onion finely chopped
2 cloves of garlic grated
1 tsp dried oregano
1/2 tsp ground cumin
Salt
Pepper
1 package cascadian farm riced cauliflower frozen
1 tbl tomato paste
1 can pinto beans rinsed and drained
1 cup fresh or frozen corn
1 cup halved cherry tomatoes
1 jalapeno seeded and finely chopped.
1/4 cup chopped fresh cilantro
1 1/2 cups cheddar jack cheese
Avocado slices squeeze with lime juice for serving
Method
I'm a large skillet over medium heat, heat oil . Add onion and cook until tender about 5 minutes. Stir in garlic, oregano and cumin and cook until fragrant about 1 minute. Add more oil if skillet seems dry. Then add cauliflower rice season with salt and pepper and cook, stirring occasionally until rice is tender 3-5 minutes. Add tomato paste and stir until evenly combined and the cauliflower rice is slightly red. Add beans , corn tomatoes, jalapeno  and cilantro and stir until evenly combined
Top rice with cheese cover with a tight fitting lid and cook until cheese is melted about 3 minutes.  Serve immediately wit h avocado slices and enjoy

Chef Ava Marie 101 tip: If you don't have a tight fitting lid no problem! Spray a piece of foil or 2 and coat with non stick cooking spray and cover cooking spray side down until melted and it won't stick to the foil that way a no fail solution
