Hi foodies I just submitted part one recipe for the great garlic cook off 2018 in Gilroy California as you may know my best friend and food blogger rebecka Evans won 1st place in 2016 while she was living in Danville California she now lives in Pearland Texas and this garlic oregano butter roast Cornish game hens is so tender it taste like chicken a lot of younger millennials don't know much about Cornish game hens this is a family favorite my grandparents enjoyed this, my parents enjoyed this and now I enjoyed it not my peers and siblings I know if you think about kale think about this poultry too. I hope they choose this to make my family proud
2018 Great Garlic Cook-Off Official Rules

Garlic oregano butter roast Cornish game hens with zucchini zoodle salad 2 Cornish game hens defrostedand washed 2 tbl dried oregano 4 tbl butter softened 4 cloves garlic sliced thinly Salt and pepper For zucchini zoodle salad 2 zucchini ends trimmed and sprialized 2 tbl olive oil 2 tbl balsamic vinegar 2 tbl honey 2 cloves of garlic grated 2 oz goat cheese crumbles Method Preheat oven to 375 Wash and pat dry Cornish game hens and season with salt and pepper on both sides of Cornish hens. Place onto a baking pan. Slide underneath the skin to form a pocket to fill garlic slices with paring knife. Leg side upward. Then tuck garlic slices under the skin of Cornish hens and rub game hens with butter and top off with oregano and bake at 375 degrees for 50 minutes or until cooked through and tender. Meanwhile in a small mason jar layer ingredients in order listed except for the zucchini and close lid and shake hard for 45 seconds and pour over the bowl of zoodles and toss to combine. Add goat cheese crumbles and tossto coat to plate use a pretty platter or mini casserole dish and picture is included in the blog enjoy |
