Chicken tamale pie

Hi foodies, yesterday I made my mom and dad a tamale pie using creamed corn and kernel corn it's a nice touch to a enchilada like pie and replace ground beef for chicken. It's a great way to reduce unhealthy fats. Please enjoy this and let me know if you like it thank you










Chicken  tamale pie

2 small cans green enchilada sauce
2 cups cubed chicken cooked
1/2 onion chopped
1 small can sliced olives
1 pack 10 count corn tortillas cut into quarters
1 can whole kernel corn drained and rinsed
1 can creamed style corn
1 1/2 Packages shredded cheddar chees
2 tbl oil

Method
Preheat oven to 350 grease a casserole dish and spoon enchilada sauce on bottom of the dish set aside
Meanwhile in a large skillet over medium heat and add 2 tbl oil add onion and cook until translucent not golden then add cubed chicken cooked and 1 small can of enchilada sauce and simmer for 2 more minutes let's start assembling
Layer first layer with tortillas 1/3 meat
1/2 of whole kernel corn olives and cheese and layer with more tortillas for second layer doesn't have to be perfect add 1/3 meat mixture 1/2 creamed corn and rest of the kernel corn and top with cheese. For 3rd layer add remaining chicken mixture creamed corn , Olives and cheese  for last layer top with 2nd can of enchilada sauce and remaining cheddar and olives and place in the oven at 350 for 35 minutes or until golden brown and crispy on top let sit 15 minutes before eating yum
