Vietnamese iced coffee (dairy free and vegan)

Hi foodies want a dairy free coffee creamer this is for you! A traditional Vietnamese iced coffee has sweetened condensed milk but ours has coconut date vanilla milk dairy free of course and vegan I will be thinking of my vegetarian friends for this. If they were closer they'd have a cup with me. But I got this from Daphne oz happy cook cookbook and I love this cold brew making all you do is take a jar of mason jar and use 3/4 cup dunkin donuts dulche de leche coffee grounds and 2 1/2 cups water close lid and chill 24 hours then strain in a fine mesh strainer into a clean jar.  You'll have 4 coffees to make.









Vietnamese iced coffee 

1 can full fat coconut milk (sprouts)
4 medjool dates pitted
1 vanilla bean split lengthwise 
2 cups strong cold brew coffee 
2 tbl sugar or maple syrups optional 
Ice 
Method 
In a small saucepan over  combine coconut milk, dates, scape vanilla bean and vanilla pod and bring it to a simmer over medium high heat for 4 minutes then remove heat uncover and cool for 20 minutes.
Remove and discard the vanilla pod then pour mixture into a blender and blend until smooth. Strain into a fine mesh strainer into a mason jar and let cool 30 minutes then chill until ready to make iced coffee 
Fill a glass with ice add 1/4 cup date milk then 1/2 cup coffee over. If you want it sweeter add maple syrup or sugar serve with a straw and a smile
