Pan seared salmon with rice noodles and sweet and sour dressing

Yesterday I went on a historical walking tour of grand avenue in South San Francisco California area with Gene Mullin dad of state assemblymen Kevin Mullin and my great people and librarians of South San Francisco California libraries for this tour we talked to the locals about gallis then where la tapatia Mexican restaurant is now used to be a enterprise journal newspaper headquarters learned so much about the newspaper work and said hey I could possibly be a food writer for everything so city newspaper times if the founder gets grants, it was a idea from ssf local Steve c he said a yearbook would work too, but a daily newspaper is a must for those who don't do social media, I'm currently working on the ssfusd nutrition services newsletters for recipe of the month column for parent and grandparents out there of schoolkids got the 1st recipe in for September will let you know when the first recipe comes out ok stay tuned
After the tour went to the grocery store and then went home and made dinner for my mom and dad a pan seared salmon with sweet and sour dressing with Thai rice noodles hope you get cooking










Pan seared salmon with sweet and sour dressing on Thai rice noodles

3 tbl corn oil
3 salmon fillets 5 oz each  ( rinsed, scaled and trimmed well)
1/2 cup flour
1 package annie chuns rice noodles cooled drained and rinsed as directed

Sauce
2 shallots thinly sliced
1 tsp grated ginger
2 tbl soy sauce
1/4 cup pomengtate juice
1 tsp sugar
For the sauce: combine all ingredients to make sauce

Dressing
3 tbl fish sauce
4 tbl lime juice
2 tbl sugar
2 tbl cilantro chopped
2 scallions chopped

1/4 cup chopped roasted peanuts optional

Method add oil three times around the pan over medium heat rinse and pat dry salmon fillets and lightly coat with flour pan fry salmon fillets 2-3 minutes per side add sauce mixture cook 1-2 minutes more until it is well coated with sauce
Mix dressing ingredients and add to the noodles and toss to coat arrange cilantro lime noodles onto a platter place salmon on top top with bits of charred pomengrante shallots if desired eat well
