Steve's chicken cacciatore

This past week I made a recipe from dad's friend steve kohn made with olives tomatoes and red wine one pan dish so try it for yourself and you'll be dazzled with this dish so try this for the men in your life thank you









Chicken cacciatore
1 lb boneless skinless chicken thighs
1 cup all purpose flour
Salt and pepper to season
Olive oil
1 shallot chopped finely
1 cup sliced fresh mushrooms
1 clove garlic grated
1 can 14 oz tomatoes
1'can each black olives and green olives chopped
1 cup red wine or more to deglaze pan
3'tbl chopped basil
Method
Brown floured chicken thighs in skillet pan 3 tsp of oil drain excess oil and take chicken out to platter to rest
To the same skillet add mushroom, shallots, salt and pepper and cook until softend add garlic then deglaze pan with wine twice around the pan and stir up the bits and pieces to combine add in tomatoes and olives place chicken back to the tomato mixture simmer for 10-12 minutes or until thickened and reduced like a thick sauce add in basil serve on top of Jasmine rice
