Restaurant Style Brown sugar lime Saltfish (For CFE Saltfish blogger challenge)

Hi.I got picked out of 49 food Bloggers to compete in the latest food Blogger challenge using salted fish. The trick is rinse the salt out 3 times and soak in a container and refrigerate overnight in water then rinse again and pat dry. So it's tricky but it has Brown sugar and lime.slices and brings out the moist tasting fish ever but be careful with the bones I used #IslaBrisa salted fish that was my ingredient in the challenge I hope I win thank you





Restaurant Style Brown sugar lime Saltfish

1 bag frozen isla brisa salted pollock fillets
(It can found at Safeway or some grocery stores) wash three times with water and soak overnight very salty
1/3 cup Brown sugar
2 limes sliced thinly
1/4 onion sliced
Drizzle of extra virgin olive oil
Method
Line a oven safe dish with aluminum foil and place 2 long pieces of aluminum foil cross ways over the dish. Place the rinsed salted Pollock in foil lined dish. Generously top salted fish with Brown sugar and separate onions into rings over the lime slices fold both ends to create a packet. Place packet at 350 degrees for 20 minutes depends on the fish serve with potatoes

Tip= If the onions are still raw I quickly saute in 2 tsp oil until caramelized with a tsp of Brown sugar about 10 minutes for a winning touch
