Orange carrot cake with Orange cream cheese frosting

Hey fans, I was testing my contest recipes for san Mateo county fair king Arthur flour competiton for carrot cake, my













 mom.suggested not to add nuts to the cake batter but just for topping only i am also going to add zest of another Orange for the frosting then for the cake this is my uncle karl.recipe but with a update I think I did a great practice job but  the fair competition might be tough we'll see ok.


Orange carrot cake with Orange cream cheese frosting
1 cup toasted chopped pecans for topping cake
21/2 cup king Arthur ap flour
2 tsp baking soda
2 tsp cinnamon
1 tsp allspice
1/4 tsp salt
3 sticks butter softened
2 1/2'cup sugar
4 eggs
1/4 cup milk
Zest of 1 orange
1/4 cup Orange juice
1 tsp vanilla
2 cups grated carrots ( about 6)
Orange cream cheese frosting
1 stick butter softened
12 oz cream cheese room temp
3 cups powered sugar
4 tbl creamer
1'tsp vanilla extract
Zest of 1 orange
For cake preheat oven to 375. Line 2 round cake pans with non stick cooking spray. Set aside. Lightly spoon flour into a dry measuring cup level with a knife sift together flour with next 4 ingredients through salt.
Cream butter and sugar together in a hand mixer on medium speed reduce speed to medium low and add eggs one at a time beating after each addtiton add milk and 1/2 of flour mixture for a smoother batter, stir in Orange zest and juice, vanilla and, carrots and more flour. Divide batter evenly onto prepared pans and bake for 42 minutes or until toothpick is inserted comes out clean. My.uncle's may sink in center mine was just right tried not to overbake but pay attention to your oven please. Let layers cool in pans for 10 minutes then transfer to a rack cool completely. Top layer with frosting add second layer and top and frost sides with remaining frosting top with pecans
For the Orange cream cheese frosting cream together butter, cream cheese on medium speed of an hand mixer gradually add powdered sugar to the hand mixer add milk, vanilla and.Zest of an Orange and blend well.
