Disneyland food and wine festival (part two) a recipe for roasted cauliflower with lemon oikos cauilflower yogurt puree

Hi.fans of the food Blog I had such a great time at Disneyland food and wine festival last week. So me and.Becky and crew.spent our lunch dates at the festival kiosk from lemon grove to bacon booth..there were so many dishes the be at seller at the festival is roasted cauliflower with lemon oikos cauliflower yogurt puree, but I happen to get inspired me and Beckys mom Debbie loved it so.much we decided to try it myself I will.remake this for home use. So.now you'll get to try it for yourself and see it's enough for a family of 4-5 ok so get cooking





Roasted cauliflower with lemon oikos yogurt puree

2 heads cauliflower cut into florets (one for roasting and one for puree)
Extra virgin olive oil
Salt, pepper garlic power and onion powder
For puree
1 container oikos lemon.merigue greek yogurt
1 clove garlic minced
Salt.and pepper
2 tbl butter
1/2 cup hot water

Method
Preheat oven to 400 degrees line cookie sheet with foil.And cooking spray set aside.
Place florets from one cauliflower ontp cookie sheet drizzle with extra virgin olive oil and season with salt, pepper and garlic powder and onion powder roast for ten minutes or until fork tender
Meanwhile bring  another cauliflower with water to a boil.cook.for 22 minutes or until fork tender then add drained cauliflower to blender use a spider to drain the veggie. Add butter, salt, pepper, garlic and yogurt to the blender with cauliflower then add in.1/2'cup water and close lid and puree until velvety smooth.
To plate smear the cauliflower puree onto the bottom of the plate and top with roasted cauliflower if you want add some lemon zest like disney magic so enjoy
