chard lentil soup (low sodium recipe)

Hi fans of recipes from an autistic chef, it's a wet stormy day spent the day making a hearty soup for mom and a neighbor across the streets dad Joe. I learned this at a fresh approach cooking demo as part of library programs. I hope youAva enjoy this soup. You can use liquid aminos like low sodium soy sauce best or tamari for gluten free eaters. They seem to be better than liquid aminos to me. It's good. If you need to really cut off the salt. But I.didn't use sea salt instead use garlic powder and crushed chili flakes ok. So give this recipe a try this winter










Chard lentil soup

1 cup dried lentils sorted and rinsed
1 bunch rainbow chard leaves roughly chopped
4'medium New potatoes, cut into 1 inch pieces
2 medium carrots, chopped
1 celery stalk sliced
1 yellow onion chopped
2 tbl.evoo
1'tbl low sodium soy sauce or tamari
1/2 tsp crushed red chili flakes
4 cups chicken stock
3 cups water
2 tsp ggarlic powder

Method
Heat oil in a pot over medium high heat and add onion, celery, carrots, garlic powder, and chili flakes.  Add a little broth or water if pot starts to dry. Cook until soft 8-10 minutes stirring occasionally. Add lentils, potatoes, broth, and soy sauce. Cover and bring to a boil then reduce heat to medium low and let simmer for 45 minutes or until potatoes are soft. Add chard leaves and cook for a few minutes taste, add  pepper if desired
