California rancher beef up chili
Hi fans the cook off was a lot of fun yesterday
fun aMom good turn out but wished more would come. This was my 3rd year competing skipped last year but next year I'll be bettered prepared with a ancho Chipotle beef chili and get assistant cooks to fully committed. I've understand their schedule but 2017 is a goal. Im going to close 2016 with a two more trips cache creek with the ladies in November and New York with dad in December no more culinary competing until 2017 rolls in. Will use this time to test new recipes until then enjoy my honorable mention win win chili pot recipe
California rancher
1lb ground beef
1 tbl each chill powder.and garlic powder
1 tsp each cumin and paprika
1/2 tsp cinnamon
3tbl tomato paste
2 tbl Brown sugar
1/4 tsp ground cloves
1 large carrot chopped into small pieces
1 onion chopped
2 Fresno red jalapenos seeded and chopped finely
2tbl evoo
3-4 cups chicken stock
Cornstarch and water 1 to 1 ratio
Method
Mix all spices and Brown sugar .except vegetables garlic broth and cornstarch
Brown beef into a pot with half of the spices until rendered down drain the fat and transfer to a crock pot. In a same potI add in evoo saute veggies along with tomato paste and garlic with remaining spice mix until soft and translucent add to the crock pot with the beef and pour chicken stock over the meat and veggies cook on high for 5 hours at the last 2 hours add cornstarch water mix (water must be cold) add to the chill cook until thickend serve onto bowls enjoy
