Strawberry Jam glazed sweet potato ricotta brushetta

hi fans, I was trying to devlop recipes for those who don't use social media. we like to call it a neighborhood newsletter once a month I post a recipe to those who don't use social media and this I might sent to Sharon my hometown's news letter editor to publish in November's newsletter. so im always cooking something new daily. so keep on cooking and mingling
 







Strawberry jam glazed sweet potato ricotta bruschetta

for the oven roasted strawberry jam glazed sweet potatoes
4 small sweet potatoes, peeled and cubed
1/4 cup evoo
3 tbl apple cider vinegar
3-4 tbl smucker's fruit and honey strawberry jalapeno jelly
salt and pepper to season
for the bruschetta
1 baguette toasted
1 tub ricotta cheese

method
preheat oven to 400 degrees. in a medium bowl whisk jam, oil and vinegar along with salt and pepper to form a glaze. then add the cubed sweet potatoes and toss into the jam mixture. place onto a foiled lined sheetpan. bake for 30-35 minutes until golden and fork tender flipping once. set aside to cool.
meanwhile toast baguettes on a another cookie sheet along with a drizzle of evoo toast for 7 minutes make sure it doesn't get burned. but toasty place onto platter spread a tablespoon of ricotta on a piece of toast then top with the strawberry sweet potato glaze and repeat until all is used up. serve to your friends~! yum!
