Greek yogurt pound cake
2 1/4 cups sifted flour
2 cups sugar
1 tsp salt
1/2 tsp baking soda
2 sticks softened butter
1 5.3 oz cherry greek yogurt such as clover organics
3 eggs
1tsp vanilla
1 tsp grated lemon peel

method
preheat to 350 degrees. grease loaf pan set aside. for mini ones, don't grease use disposable it works for gift giving that way.
in a hand held mixer beat butter and sugar until light and fluffy. add egg one at a time until incorporated along with vanilla, lemon peel and yogurt. sift together flour, baking soda and salt in a smaller bowl gradually add to yogurt mixture beat for 4 minutes. make sure it is all incorporated. the cake batter will look like frosting but its good! divide into loaf pans for large pan bake for 1 hour and for small ones to give 45-50 minutes or until toothpick inserted in center comes out clean. let cool remove from loaf pan. slice and serve to company
