Strut your duck recipe contest entry #1: Duck sloppy joes on hawaiian buns

hey fans of chef ava marie and my blog, my fellow food blogger pal becka, of at home with rebecka told me to enter the duck cooking contest and accepted it. so I am entering 2 recipes into this contest, the one recipe I made today is a ground duck sloppy joe on a king's Hawaiian buns, so I hope this recipe gets me into the finals #strutyourduckcookingcontest








Duck Sloppy Joes on a Hawaiian bun

2 tbl butter divided
1 tbl molasses
1lb ground duck from maple leaf farms
1 6 oz can tomato paste
2 tbl yellow mustard
1 onion chopped
1/4 lb (about 5 mushrooms sliced)
paprika to taste
a pinch of red chili flakes
2 tbl ketchup
1 tsp sriracha sauce
1 tbl rice vinegar
salt to taste
pepper to to taste
3 tbl of water 
8 kings Hawaiian buns toasted and split
method
in a medium skillet over medium high heat add a tbl butter and sauté mushrooms until soft, season with a little salt and pepper. transfer to a bowl set aside in a same medium skillet add another 1 tablespoon butter add chopped onion and sauté until soft and caramelized 8 minutes transfer to another bowl and set aside too. in a larger skillet spray with a little cooking spray (duck has a ton of grease keep in mind) add the ground duck and cook until browned and no pink is left on the stove. 10 minutes. drain the fat in a colander and transfer back to large skillet along with onion, mushrooms, molasses, tomato paste, ketchup, mustard, spices, sriracha and rice vinegar. cook for a few minutes add a little water to reach the desired sloppy joe consistency (I like mine on the thick side but don't add too much water it will turn into soup) spoon onto toasted Hawaiian bun and enjoy this hoping to win or lose dish.
