Chicken Thigh Tikka masala with quinoa rice

Hi foodies are you craving indian food i got a easy recipe using boneless skinless chicken thighs they have more texture and flavor then chicken breasts. So easyto make easy to use great for a family of 6 so make this @ home tonight guys it's easy. I learned this from another cooking instructor amy fothergill of the family chef blog.

Chicken Thigh Tikka masala with quinoa rice
1/2 onion chopped
2 tsp olive oil
1/2 sweet potatoes, peeled and cubed
3 carrots peeled and cubed
3 Yukon gold potatoes diced into medium pieces
1 jar yellow curry masala sauce like patak's brand
1lb boneless skinless chicken thighs cubed
method
saute onion in olive oil whIle that cooks add the sweet potatoes to the onion and stir.
add in the carrots while the sweet potatoes along with yellow potatoes cook until soft. Then add entire Jar of sauce plus half of jar full of water.simmer covered stirring occasionally for  20 minutes or until potato is becoming soft. Add pre browned chicken thighs(saute chicken thighs for 4 minutes then take out of skillet to a hot plate) stir and cook for ananother 8 minminutes serve over quinoa rice

Quinoa rice
1 1/2 cups jasmine rice, rinsed with water
4 cup water
1/2 quinoa rinsed
Method
Place all ingredients into a pot bring to a boil cover and lower to a simmer. Cook about 20 minutes or until all the water is abosorbed fluff with a fork.
