Chicken Poblano Flautas (or Taquitos) with Tomato Onion Poblano salsa (recipe included)

Chicken poblano flautas with tomato onion poblano salsa
1lb boneless skinless chicken thighs
1/2 jar tomatillo salsa
1/2 bag sargento Mexican 4 cheese blend
2 poblanos, roasted, skins off, seeded and one diced (for salsa) and one cut into strips (for flautas)
8 corn or flour tortillas, warmed in oven
3 tomatos, seeded and diced
1 red onion. sliced
1 green jalapeno
1 fresno chili pepper
a handful of fresh cilantro
salt and pepper
for the honey tomatillo sriracha glaze
3 tbl tomatillo salsa
1 tsp sriracha more if like it hot
2 tsp honey

method
preheat the oven to 425 degrees. line cookie sheet with foil and grease with cooking spray. set aside.
meanwhile wash and  dry chicken with paper towels. place into a container pour half of the tomatillo salsa to the chicken and toss with the chicken to massage it. let it sit in the refridgerator for 1/2 hour.
meanwhile. in a grillpan grease pan with cooking spray. in a small bowl mix honey, sriracha and tomatillo salsa together and drizzle over the onion slices grill onions 3-4 minutes per side until soft and golden on both sides. make sure to glaze the other side with glaze before flipping. in a bowl combine tomatoes, chilies, cilantro, poblano chilies, chopped up honey sriracha onions, salt and pepper, add more sriracha to your tastebuds. wash grill pan and then in the same grillpan grease with cooking spray again grill the chicken on both sides until cooked through 3-4 minutes per side. transfer to a plate to cool before chopping into bite size pieces.
warm tortillas one by one in a microwave for 20 seconds. then quickly fill tortillas with chicken then 4 cheese blend and 1-2 strips of poblano and roll up tightly and place seam side down on a grease pan. make sure all is used up and repeat. grease the top of taquitos before baking. bake for 12-15 minutes or until golden brown and crisp. enjoy with salsa.
