tomato olive and mozzarella brushetta

Hello foodies happy hump day. I made a tomato olive andmozzarella brushetta for a private cooking class event at baden high school transitional program which serves students from age 18-22 years of age so look forward to presenting this dish to them I'll share it with the public now before I share with a small group so more cooking after working tomorrow







Tomato olive and mozzarella brushetta Recipe developed for baden high school transitional program march 22nd 2016

2 cups halved cherry tomatoes halved  or 5 tomatoes seeded and diced
1/2 cup chopped black olives
1 tsp balsamic vinegar
salt and pepper to taste
1/2 cup chopped chiffonande basil
1 clove grated garlic
Juice of 1 lime
1 8 oz mozzarella sliced
1 baguette sliced diagonally into 1/4 inch thick slices and toasted on a grill with oil
method
mix all brushetta ingredients except for mozzarella and Bread. Place grilled bread slices onto a platter then place slices of mozzarella onto each toast then top with the tomato olive topping and enjoy
