cucumber jalapeño ceviche (from a co-worker of mine)
Hey fans the other day California had a 100 degree heat wave so i didn't feel like using the stove so i decided to make cucumber ceviche. My co worker jennifer castillo who used to work at via shared this recipe with me. A few years ago its light super healthy youll want more. I modified it using cooked shrimp and only marinated for 2 hours instead of 1 day so nrxt tine jusy do something light abd youll be in the kitchen no matter what seasons is so happy cooking
Cucumber shrimp ceviche
2 lbs cooked shrimp. Tail ends off lesve kinds whole
2 lemons and 4 limes
Add shrimp to a bowl with both juices. Let sit covered with plastic for 2 hours.
After 2 hours then add to mixture
2 avocados pitted and cubrd
1/2 red onion chopped
2 tomatoes chopped
1/2 cucumber diced
Salt pepper to taste
8 tostada shells
And mix well to combine serve with tostada shells yum
