Teriyaki chicken and Zucchini lettuce wraps

hey guys, today I was inspired to cook a delicious, nutritious lettuce wraps with teriyaki chicken marinade and zucchini. super fast super quick to make, use butter lettuce leaves and I topped the wraps with sriracha mayo mmm. so get making this recipe during a fast weeknight meal for your family no msg so do not add salt to this so just saying so made with love and spice and care













Teriyaki chicken and Zucchini Lettuce wraps

1 head butter lettuce
1 bottle teriyaki marinade with pineapple juice such as Lawry's
2lb package boneless skinless chicken thighs, cubed
2 zucchini, ends trimmed and sliced into coins
4 tablespoons oil divided
2 Serrano chilies, seeded and diced
1 fresno chilies seeded and diced
sriracha mayo for serving wraps

method
place chicken cubes in a bowl add 1/2 bottle (about a cup) into the chicken mix well to massage the chicken. cover with plastic wrap and marinate for 30 minutes. then another bowl add sliced zucchini into a bowl with another 1/2 cup zucchini, and marinate for 30 minutes as well until ready to sauté.
have 2 sauté pans ready add 2 tablespoons oil to each pan and heat to medium high heat, to the first one add zucchini and peppers and cook until zucchini is caramelized and peppers are too 6-7 minutes. transfer to a clean plate. in another sauté pan add the cubed chicken cook for 5-7 minutes until chicken juices run clear or until meat thermometer is inserted for doneness for health safety of cooked chicken. and then transfer to a serving bowl. have the butter lettuce leaves washed and properly drained before filling with chicken and zucchini mixture and add a drizzle of sriracha mayonnaise and enjoy with friends and those you love

  2. i know its iceberg that's what my grocery store sold. but when you make lettuce wraps at home, use butter lettuce and find the best ones you can find, i go by what's in season and im proud to be a chef i am today so good luck with my recipe @flutterby
