Spinach Ranch dip Mac and Cheese

hey foodies, on sunday I made spinach ranch dip mac and cheese made rich béchamel sauce, added a 1/2 packet of hidden valley ranch dressing mix to give it a zip. added a pinch a nutmeg and mozzerlla to make this cheesylious its baked in the oven and you will want seconds believe me! so you can freeze the casserole ahead and defrost to reheat if you would like. so make this recipe, its worth the try!













Spinach Ranch dip mac and cheese

kosher salt
4 tbl butter
1 onion chopped
pepper
grated nutmeg
1/3 cup all purpose flour
5-6 cups milk
1 10 oz package frozen spinach, thawed and drained
1/2 packet hidden valley ranch dressing mix
2 cups shredded mozzarella cheese
1 lb ziti or penne pasta
1 cup panko bread crumbs
2 tbl evoo

method
prheat oven to 375 degrees
bring a pot of boiling salted water to a full boil.
heat the butter in a medium saucepan over medium high heat. stir in the onion, 2 tsp salt and pepper. cook until golden 6 minutes.  stir in flour until well combined whisk in milk and bring to a simmer adding a pinch of nutmeg along with it. it should be thick slightly. stir in the spinach simmer until thickened 8-10  minutes more. stir in the mozzarella and the ranch dressing mix and remove from heat.
add the pasta to the boiling water and cook according to the package directions.drain, then toss the pasta with the sauce. transfer to a greased casserole dish
toss panko with the oil and sprinkle over pasta. bake until the filling is bubbly and the panko is golden 40 minutes. let sit 15 minutes before digging in
