Kethethes (Greek Meatball) Gyros with Cucumber Mint Yogurt Sauce

hi readers, today I made Kethethes a greek meatball recipe made into a gyro with a Cucumber mint sauce I made myself its soo good. I didn't have to read a cucumber mint yogurt dip recipe I made, but the meatballs I did follow the recipe and the assembly is easy. so I hope you enjoy making them at home as we did, so enjoy!
















Kethethes (Greek Meatball) Gyros with Cucumber Mint Yogurt Sauce

for Ava's Cucumber mint yogurt dip
2 5 oz Chobani plain greek yogurt
1/2 cucumber, peeled and grated
1 clove grated garlic
3 tbl chopped fresh mint
salt and pepper to taste
juice of 1/2 lemon

for the Greek meatballs
2 lbs ground beef
1/2 onion finely chopped
1 cup crushed graham crackers
2 eggs
1 tbl chopped mint
3 tbl chopped Italian parsley
1/2 tsp pepper
1 tsp salt
2 cloves grated garlic
canola oil for frying
flour for dusting hands

for assembly
1 recipe Kethethes (Greek Meatballs)
1 recipe Ava's Cucumber mint yogurt dip
1 package of middle eastern flatbread (I used Trader Joe's) pita works well too!

method
in a bowl mix all the cucumber mint dip ingredients  together well and cover with plastic wrap and chill until serving. set aside
in a bowl mix meat, grated garlic, onions, mint and parsley. add the eggs, crackers, seasoning and mix put some flour in a plate and roll meat into balls. put some flour in your hand when rolling. do not put meat in flour as it will gather too much flour. fry in canola oil until cooked through. drain on paper towels as you build your gyro
to assemble place one toasted flatbread on a flat surface spread with Ava's Cucumber mint yogurt dip and place 2-3 meatballs on top and wrap it up and you can serve this street food style like they do in food trucks so enjoy!
