Sausage Carrot sloppy Joes
1 1/2 lbs sweet Italian sausage
1 onion, white, chopped finely
2 carrots, peeled, ends off and sliced into coins
1 can sloppy joe sauce
2 tablespoon canola oil
6 hamburger buns toasted and split

method
in a pot heat canola oil over medium high heat. add carrot coins cook for 10 minutes, at the last 5 minutes add the onions and cook down a bit. if the pan starts to scorch add water to deglaze the pan it helps not to burn the pan. I find that really helpful. add the sausage and crumble and cook for 10 more minutes until browned no pink around the pieces. once all the pink is gone. add a can of sloppy joe sauce and let it heat through for 3 minutes. divide into 6 friends and spoon the meat mixture over toasted buns and eat up! makes 6 servings
