Verde Butternut Squash Soft tacos with sour cream and Cojita cheese

Verde Buttered Butternut Squash Soft tacos with sour cream and Cojita

2-3 tbl Dear Martini's Verde Compound butter
pepper to taste
2 cups cubed, seeded and peeled butternut squash cubes
2 oz cojita cheese, crumbled
2 tsp sour cream
4 flour tortillas warmed up to serve

in a large skillet heat compound butter over medium heat then add the butternut squash cubes and cook for 12 minutes until soft and caramelized and stir often so it doesn't burn. heat the tortillas as the squash cooks. season squash with pepper or salt to your tastebuds. then remove the soft caramelized verde squash from heat place 2 tortillas onto a plate scoop squash on top of each tortilla about 1/4 full each taco. then top with crumbled 1 oz cojita on both tacos and 1/2 tsp each of sour cream onto 2 tacos on top. repeat 2 more tacos for your best friend who may be a vegetarian with the same method. and eat up and enjoy!
