Sweet potato marshmallow casserole

hello reader's decided to make a jack Tidwell classic thanksgiving favorite today. its called sweet potato marshmallow casserole, and its basically a mashed sweet potatoes with a streusel topping and marshmallows mmm. you can make this for your next holiday potluck or friend's potluck or even on Christmas day dinner so get inspired by sweet potato you cant just have it once a year? come on!





Sweet potato Marshmallow casserole

3-4 sweet potatoes, washed, peeled and cubed
1/2 cup sugar
1/4 cup half and half
1/4 cup butter
brown sugar  nut topping recipe follows
2 cups mini marshamallows
bring a pot of peeled sweet potatoes to a boil and cook them on medium low for 20 minutes or until fork tender, drain and add back into the pot, add the half and half and mash with a potato masher like you are making mashed potatoes, add in sugar and 1/2 cup butter and mix until creamy and incorporated. add to a 9 x 13 inch lasagna pan and  sprinkle with the brown sugar nut topping over top of potatoes bake at 350 for about 20 minutes, take it out and top with marshamallows and then add back to oven for 5-10 minutes until toasted like smores enjoy with stuffing and ham!

brown sugar nut topping
1 cup packed light brown sugar
1 cup chopped pecans
2/3 cup flour
6 tablespoons butter

combine sugar, pecans and flour then with your hands drizzle in the butter and mix until it forms pea size crumbles. sprinkle over mashed sweet potatoes before baking
