italian pieorgi Spinach salad with goat cheese and olives
so hi readers tonight for dinner I made delicious pierogi spinach salad, It originally called for Caesar salad dressing but decided to swap it out for Italian dressing mmmm so go make yourself a nice hearty and light salad and its healthy too, its like ravioli and salad in one so get cooking!
Italian Pierogi spinach salad with goat cheese and olives
1 package frozen pierogis thawed a bit with 1/2 bottle of Italian dressing in a pot (I like the potato cheddar kind)
1 bag frozen spinach washed and dried in a colander
1/2 cup halved olives
3 oz goat cheese crumbled
method
toss slightly thawed frozen pierogis with enough Italian dressing to moisten. sauté pierogis in skillet until soft and heated through. mix together spinach olives and toss with warm Italian pierogis drizzle with little more dressing it may not need it. and divide into bowls and sprinkle with goat cheese
tip. I add 1/2 cup water to the pot as the pierogis cook so it does not stick to the pan
also you can add tomatoes if you wish, or swap kale for spinach so have fun cooking!
