My Trip to sonoma Ca: Pizza Party @ my friend becky's with 3 recipes (part one) plus a extra recipe

hello fans, I am back from a long trip from Sonoma, I went to see my special needs friend becky and she is the sweetest. on Saturday we made 3 kinds of pizza, squash and goat cheese, eggplant hummus and of course the Jimmy Fallon pizza is born (mozzarella, pancetta and caramelized onion pizza) and you will get three recipes. so heres the photos and all the happenings so enjoy the recipes

 here is the debut of the Jimmy Fallon Pizza (I wish he was there to taste it, its a pancetta caramelized onion mozzarella pizza. he loves pizza and is an new Yorker Italian American comedian
 this is your bonus recipe your zesty tomato quinoa made with tomatoes and bell peppers
then this is the eggplant hummus pizza with goat cheese, looks delish fresh from the sweetwaters garden

Recipes:
Squash and Goat cheese pizza

1 pound pizza dough
1 tablespoon evoo, plus more for the pan
3 cloves garlic minced
6 oz goat cheese crumbled
2 zucchini, farm fresh, sliced

method
preheat oven to 400 degrees place pizza dough on oiled baking sheet and stretch dough to form a oblong crust. brush with olive oil top with zucchini slices and garlic and dot with goat cheese bake until pizza crust is browned and cheese is melted 20-22 minutes. check ovens may vary

The Jimmy Fallon Pizza

1 pound pizza dough
3 oz pancetta diced
1/2 onion diced
5 oz ball fresh mozzarella cheese
1 tablespoon evoo, plus more for the pan

method
preheat oven to 400 degrees place pizza dough on oiled baking sheet and stretch dough to form a oblong crust. brush with olive oil. and set aside
in a small skillet over medium high add the diced pancetta and cook until crispy drain on a paper towels. in a same pan (use the pancetta grease) to sauté the onions in and sauté the diced onions until caramelized 5-7 minutes. then top the pizza crust with mozzarella slices, caramelized onion mixture and pancetta and bake until pizza crust is browned and cheese is melted 20-22 minutes check ovens will vary

Eggplant hummus pizza

1 pound pizza dough
1 tablespoon evoo plus more for the pan and for the sautéing
2 japanese eggplants, cut into slices and then diced
1 tub hummus
3 oz goat cheese, crumbled
8 heirloom mini tomatoes, halved or quartered
method
preheat oven to 400 degrees  place pizza dough on oiled baking sheet and stretch the dough to form a oblong crust. brush with olive oil and set aside.
in a small skillet heat oil over medium high heat add the diced eggplant season with salt and pepper and cook for 5-10 minutes until soft. spread hummus onto pizza crust then top with heirloom mini tomatoes and then the eggplant and dot with goat cheese on top. bake for 20-22 minutes until crust is browned and cheese is melted check ovens it will vary

Bonus recipe: Zesty Tomato Quinoa

1 cup water
1/2 cup quinoa
1/2 onion, chopped
1 tsp olive oil
2 garlic cloves minced
1 can 10 oz diced tomatoes
1 red bell pepper, diced
3 tbsp. grated parmesan cheese
method
in a small saucepan bring water to a boil then add quinoa reduce heat cover and simmer for 12-15 minutes or until liquid is absorbed remove from heat fluff with a fork
in a large skillet sauté onions and peppers in oil until tender. add garlic cook 1 minute longer add tomatoes and bring to a boil over medium heat. reduce heat and simmer uncovered for 10 minutes stir in quinoa. heat through sprinkle in the cheese.
