Sausage, pepper and onion chili (for the 2nd annual friends of parks and recreation chili cook-off event)

hi fans and readers, yesterday perfected some homemade chili that will take place on September 6th with my assistant chef veronica at the 2nd annual chili cook-off through south san Francisco friends and parks and recreation. i've practiced it 3 times already and i am ready to take it to the next level and i promised chef terri about the rematch i hope it will happen soon! so here is the images and recipe for now. if you do attend, you will get hard copy of a recipe so i invite south san Francisco locals to come to orange park on September 6th from 11-2pm and there will be raffles, hot dogs and booze and refreshments. the chili tasting kit is 10.00 so just so you know see you all there i hope!






Sausage pepper and onion chili

1 1/2 lbs ground Italian sausage (i get the target kind like they sell the hamburger) not in bulk tubes
1 onion, diced
1 red bell pepper, seeded and diced
2 jalapenos seeded, deveined and diced
2 Italian sweet peppers (the funky ones you find at the farmers market), seeded and diced
salt and pepper
2 tablespoons chili powder
1 tsp ground cumin
2-5 drizzles of Sriracha sauce
1 can diced tomatoes
2 cups warm water
2 tbl cornstarch to 2 1/2 tablespoons cold water
method
in a large pot cook sausage and veggies until the meat is rendered down (until no pink meat is shown) drain fat in a strainer- do not drain in the sink, bad for the animals. and add back into pot and turn to medium high heat again and add the spices, sriracha, diced tomatoes and water. bring to a full boil then reduce heat to medium low and simmer for 1 hour covered. at last 1/2 hour add cornstarch slurry and cook at the time. it will thicken. taste. adjust seasonings and serve
this may cause heartburn but very good dish for Italians and americans so will see you there for you to taste my chili!!!
