Panzanella Salad with Roasted red pepper

hi reader's I got another recipe for you. I made panzanella salad just for you! its made with toasted bread cubes and tomato, basil, garlic and seasonings I hope you enjoy and will be back in the kitchen on Monday! so have a good weekend finding easter eggs!



 
Panazella salad with roasted red bell peppers
 
2 large heirloom tomatoes, diced* see note
1/2 tsp kosher or sea salt
3 cups cubed sourdough bread, toasted
1 garlic clove grated
1 shallot very thinly sliced
 1 medium roasted red bell pepper diced
1/4 tsp EVOO
Red Wine Vinegar to taste
pepper to taste
5 large basil leaves cut into s chiffonade
 
method
in a medium mixing bowl combine tomatoes with salt, pepper and garlic.
stir in the remaining ingredients and let the bread absorb the juice from the salted
tomatoes, olive oil. when softend serve at room temperature with a nice chicken dinner its
its great with white wine! enjoy!
 
tip: I use 3 roma tomatoes because that's what's in season but heirloom tomatoes will be in season in june so stay tuned this summer!
