Meat Ricotta fried pies

hello reader's I am back, so today I made meat ricotta fried pies made with a homemade pastry and a meat sauce and ricotta cheese. I developed this recipe for the san mateo county fair king Arthur flour's hand pie contest and did a practice run I bake them and they turn out buttery and delicious secret to a great pie dough flour, butter, salt and water simple so I hope you enjoy and will be entering this recipe for the fair this year wish me luck!

Meat ricotta fried pies
crust
1 1/4 cups king Arthur all purpose flour
1/4 tsp salt
2 tbl ice water, more if needed
1/4 lb butter
filling
1lb ground beef
1lb country sausage
1 tsp Italian seasoning
1 green bell pepper, diced
1 onion chopped
1 8 oz can tomato paste
1 8 oz can tomato sauce
1 tsp chili powder
sugar, salt and pepper to taste
1 tub 15 oz ricotta cheese

method
preheat oven to 375 degrees
grease a cookie sheet with non stick cooking spray
to make crust combine flour, and salt in a bowl. cut butter into pieces with a knife and add butter and mix with your hands until mixture resembles coarse meal. lightly work in enough water for the dough to come together if dough is too sticky add more flour work dough into a ball and leave in the fridge chilled in plastic wrap as you make the meat mixture
filling heat a large pot over medium high heat with cooking spray. brown beef, sausage along with onions and peppers and Italian seasoning and cook until rendered down. drain fat and return mixture to pot and add the tomato sauce/paste chili powder and let it simmer for 10 minutes. taste if too tart add a little sugar season with salt and pepper and boom! let sauce cool down completely as you roll out the dough
assembly roll out the dough make sure to flour board and rolling pin as you roll. cut into circle (I use a ramekin but you can use a pie cutter if you like) when meat mixure is cooled down. first spoon a tablespoonful of ricotta cheese and a tablespoonful of meat mixture do not over stuff. fold in half crimp edges with a fork and repeat until all is used up. and place onto greased cookie sheets
bake for 15-20 minutes or until golden brown on the outside. let cool, and enjoy!
