Quinoa With Feta and Olives (my Sister's Recipe)

hello reader's today, it's a raining day in south san Francisco California and I decided to make a nice quinoa salad to practice for the next county fair heart healthy entrée contest, its packed with loads of flavor I roasted the bell pepper in the oven with the garlic and used feta and olives so I hope you enjoy. its just a practice for June's annual san mateo county fair cooking contests so enjoy for now!







Quinoa with Feta and Green olives

2 cups uncooked quinoa
3 cups water
3 red bell peppers
2 garlic cloves
extra virgin olive oil
red wine vinegar
1 3oz feta cheese
1 can sliced green olives

drizzle peppers and garlic with extra virgin olive oil and then  roast then at 425 degrees for 45 minutes then take out of oven let cool completely  then peel skin off the pepper with a damp towel take seeds out and dice finely and place in a bowl. meanwhile rinse quinoa under cold water and then add to stockpot along 3 cups water bring to a boil reduce heat and simmer for 10-17 minutes until poofed and sprouted then fluffed with a fork and add to the roasted red peppers and add in minced roasted garlic in with the quinoa when cooled completely aadd a little more extra virgin olive oil, red wine vinegar, olives and feta and mix to combine and serve with your friends and loved ones!
